Recipe #19: Potato fry

Aloo fry (serves 6)

Ingredients:
Half kg potatoes
3/4 teaspoon chilli powder
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
A pinch of hing
Tamarind water made from half lemon size ball of tamarind soaked in water and water squeezed out
Cooking oil

Method:
1. Cut potatoes into approx one inch cubes and cook in pressure cooker (mostly for a whistle) till its cooked, but still firm
2. After you open the pressure cooker, peel the potatoes
3. In a (preferably iron) kadai, add the potatoes, chilli powder, coriander powder, turmeric powder, hing and tamarind water. Stir till it starts to dry. Keep adding little portions of oil around the edges to keep it from sticking to the pan. Allow it to brown nicely.
4. Once browned you are done. You will be left with a tangy, spicy aloo fry
