Recipe #20: Vanilla Sponge Cake

Makes around a half kg cake (serves 6)

Ingredients:
Maida - 1 cup
Unsalted butter - 3/4 cup
Sugar - 3/4 cup
Egg - 1, beaten
Milk cream - 1 tablespoon
Milk - 1 tablespoon
Vanilla essence - 2 drops
Baking soda - 1 pinch
Baking powder - 1/4 teaspoon

Method:
Take a bowl and add the butter. Beat till fluffy. Add sugar and mix lightly. Add beaten egg, milk, cream and vanilla essence. Mix well.

In another bowl, mix together the maida, baking soda, baking powder. Sieve the mixture.

Now add this powder mixture to the butter mixture. Fold everything together till just combined, do not beat or over mix.

Add into a cake pan and bake at 350F for 25-30 mins.
